I have always loved to cook. I actually went to culinary school — the Institute of Culinary Education in New York City. Cast iron is the jack of all trades. I own five or six pans from Smithey Ironware in Charleston, South Carolina. They make a big two-hander that I use all the time called the No. 14. It’s in heavy rotation at home or cooking on live fires while camping. One-pot wonders are the best. Start with any type of roast. (Pork loin is a favorite.) Then add your root vegetables — onions and potatoes — at the same time and in the same pan to get those great flavors. Some day decades from now, my children will be cooking on my Smithey pans.
